Sweet Potato Waffles

potatoes, rosemary, pancake flour, and eggs. It's healthy, filling and downright

Sweet Potato Waffle with a tuna ball |
Ingredients:
2 medium sweet potatoes
(boiled and smashed)
2 large eggs
2 table spoons of
rosemary
1 ½ cups of pancake
flour
Instructions:
1. Preheat the waffle
iron.
2. In a large bowl,
combine the smashed sweet potatoes, eggs, rosemary and pancake flour. Mix until
everything combines and the batter becomes smooth.
3. Spray the waffle iron
with cooking spray. (Make sure you coat every spot, top and bottom, before
scooping out the batter for each waffle.)
4. Scoop out about 1/3
of the batter into the middle of the waffle iron, spreading it out evenly.
5. Close the lid of the
waffle iron and let it cook past the finished light for at least a few more
minutes.
6. Gently turn the
waffle out onto a plate, and then repeat with the remaining batter.
To top off the waffle
you can add a tuna ball or a poached egg. The possibilities are endless; enjoy
it while it’s hot!
